One of my favorite coffee memories is when I got to tour the factory of North Pole Coffee Roasting Company.  We were in Fairbanks, AK visiting some friends who were able to get us a tour of the North Pole Coffee Roasting Company’s manufacturing plant.  It smelled so good in the roasting room that I didn’t want to leave because they were roasting a batch while we were there. It is a small roasting company with two roasters.  We were able to learn how the different roasts are made (at least generally) and where the company bought their raw beans from. 

One of the most interesting things I learned was that hand picked beans can have small rocks and various other items, that are not beans, that must be filtered out before roasting.  We were given some samples of North Pole’s different roasts and went home with a new appreciation of coffee roasting.  I can still remember how good it smelled to walk into the roasting room to this day!
